Ratatouille

Plant-based food doesn’t have to be boring – quite the opposite! With just a few simple ingredients, you can create a dish that is both delicious and beautiful to look at! I can’t wait for you to try it—I hope you enjoy it as much as I do!

Ingredients
  

You will need:
  • 1 tbsp olive oil
  • 1 small onion
  • 4 cloves of garlic
  • 1 grated carrot
  • 500 ml tomato sauce
  • 1 tsp coconut sugar
  • 1 tbsp white wine vinegar
  • 2 tsp Mediterranean herb mix
  • Salt and pepper to taste
  • Various vegetables like carrot, sweet potato, zucchini, beetroot, potato

Method
 

  1. Fry the onion and garlic in oil.
  2. Add the grated carrot and season with salt and pepper.
  3. Then add the tomato sauce, coconut sugar, and white wine vinegar. Let the sauce simmer over medium-low heat for about 30 minutes.
  4. Pour the sauce onto a baking tray and arrange thinly sliced vegetables on top (as in the picture).
  5. Drizzle a little olive oil over the vegetables and sprinkle with Mediterranean herb mix or dried thyme, oregano, and/or basil.
  6. Bake in the oven at 180°C (350°F) for about 1 hour.
