Method
- Fry the onion and garlic in oil.
- Add the grated carrot and season with salt and pepper.
- Then add the tomato sauce, coconut sugar, and white wine vinegar. Let the sauce simmer over medium-low heat for about 30 minutes.
- Pour the sauce onto a baking tray and arrange thinly sliced vegetables on top (as in the picture).
- Drizzle a little olive oil over the vegetables and sprinkle with Mediterranean herb mix or dried thyme, oregano, and/or basil.
- Bake in the oven at 180°C (350°F) for about 1 hour.
