Vegetable Stock Cubes

Stock cubes that are suitable for soups, sauces, and stews, and why not even for seasoning rice.
These stock cubes definitely won’t taste exactly like the store-bought ones — commercially sold cubes often contain additives such as flavor enhancers and also significantly more salt. That said, these homemade cubes are a lovely addition to many different dishes!

Ingredients
  

  • 2 tbsp  olive oil
  • 200 g celery stalks
  • 200 g celery root
  • 400 g leeks
  • 300 g carrots
  • 1 red onion 
  • 1 white onion
  • 10 g parsley
  • 20 g grated ginger
  • 5 cloves of garlic
  • Small bunch of fresh thyme
  • 55 g sea salt
  • ½ tsp turmeric
  • Black pepper
  • 100 ml water

Method
 

  1. Cut all the vegetables into smaller pieces and grate the ginger.
  2. Heat the oil in a pot and add the vegetables and ginger.
  3. Sauté lightly, then add the turmeric, thyme, salt, pepper, and water.
  4. Simmer over low heat with the lid on until the vegetables are soft (this took me about 20–25 minutes).
  5. Let the mixture cool completely, then blend until smooth.
  6. Pour the mixture into a suitable tray or dish (I used a 30 × 25 cm tray) and place it in the freezer.
  7. Once fully frozen, cut it into cubes of your preferred size (I got 42 cubes).
  8. Transfer the cubes to a suitable container or bag and store them in the freezer. Enjoy!
