Cut all the vegetables into smaller pieces and grate the ginger.
Heat the oil in a pot and add the vegetables and ginger.
Sauté lightly, then add the turmeric, thyme, salt, pepper, and water.
Simmer over low heat with the lid on until the vegetables are soft (this took me about 20–25 minutes).
Let the mixture cool completely, then blend until smooth.
Pour the mixture into a suitable tray or dish (I used a 30 × 25 cm tray) and place it in the freezer.
Once fully frozen, cut it into cubes of your preferred size (I got 42 cubes).
Transfer the cubes to a suitable container or bag and store them in the freezer. Enjoy!
