Peel and prepare all the vegetables.
Heat the olive oil over medium heat and add the onion and garlic. Sauté for a few minutes, then add the curry powder along with a little salt and pepper. Cook for another minute, stirring constantly (so nothing burns).
Add the carrots and celery. Cook for a couple more minutes, then add the potatoes, lentils, and broth. Simmer over medium heat with the lid on until everything is tender.
Blend the soup slightly, but not completely smooth. Adjust seasoning with salt and pepper if needed. Serve with a squeeze of lemon juice, seeds, fresh parsley, and for example some focaccia!
