Sweet and Sour Carrot Salad

Here’s a very simple and delicious carrot salad where steamed carrots are used instead of raw ones. Did you know that lightly cooking carrots and adding olive oil helps your body absorb beta-carotene more effectively? Steamed carrots may also be easier to digest.
Of course, raw carrots have their own benefits too (for example, they contain more vitamin C), so it’s a good idea to enjoy carrots both raw and steamed!

Ingredients
  

  • 1 kg peeled carrots
  • Generous bunch of parsely
For the dressing:
  • 2 tbsp olive oil
  • Juice of half or one lemon
  • 1 tsp honey
  • 3 crushed garlic cloves
  • Salt and pepper to taste

Method
 

  1. Cut the carrots into pieces of your preferred size and steam them under a lid until they are tender but still slightly firm. Let them cool a bit.
  2. Chop the parsley and mix together all the dressing ingredients.
  3. Place the steamed carrots in a bowl, add the parsley and dressing, and mix well.
  4. Serve alongside any dish. Enjoy!
