- Cut the tomatoes into bite-sized pieces.
- Finely chop the red onion, olives, and spring onions.
- To make the dressing, grate the tomato into a bowl. Add the olive oil, balsamic vinegar, grated garlic, dried oregano, and salt to taste. Mix well.
- Place the tomatoes and red onion in a bowl. Pour over the dressing and toss until everything is well coated.
- Top with the olives and spring onions.
