Red Cabbage Vegetable Salad

This is one of the best salads I’ve had in a long time! What makes this salad so delicious and full of flavor is that all the vegetables are finely chopped into small pieces. The lemon juice, ground cumin, and fresh garlic really bring everything to life – every bite is such a burst of flavor that you’ll want to keep eating.
You can add this salad to wraps, enjoy it with tortilla chips, or serve it alongside any of your favorite meals. Definitely give it a try! 

Ingredients
  

  • Half a head of red cabbage
  • 3 small or 1 large cucumber
  • 2 red bell peppers
  • 1 red onion
  • 1 bunch of fresh parsley
Dressing:
  • 2 tbsp olive oil
  • Juice of 1 large lemon
  • 2 garlic cloves, crushed
  • 1 tsp ground cumin
  • Salt and black pepper, to taste

Method
 

  1. Finely chop all the salad ingredients and place them in a large bowl.
  2. Mix all the dressing ingredients together and pour over the vegetables. Toss well!
  3. This salad is especially delicious if you let it sit for about 30 minutes before serving, allowing all the flavors to blend beautifully.
