Red Cabbage and Beetroot Salad

A very tasty red cabbage beetroot salad made from quite simple ingredients. There’s no mayonnaise or oil here – the creamy dressing is made from cashews. This salad tastes great even the next day, so feel free to make a bigger batch. Let me know if you try it and how you liked it!

Ingredients
  

  • 400 g red cabbage
  • 1 small red onion
  • 1 tart apple
  • 2 tbsp fresh parsley
Dressing:
  • 50 g cashew nuts
  • 1 small cooked beetroot
  • 2 garlic cloves
  • juice of half a lemon
  • 1 tsp honey
  • salt and pepper to taste

Method
 

  1. Grate the beetroot and an apple.
  2. Finely chop the red cabbage, onion, and parsley. Add them to a bowl with the beetroot and apple, then toss everything together.
  3. Blend all the dressing ingredients until smooth and creamy.
  4. Mix the dressing into the salad and garnish with fresh parsley. Enjoy!
