Fresh Tomato Salad With Green Olives and Red Onion

Tomato season has officially started in Greece. At the vegetable market, the sweet smell of strawberries has been replaced by the rich aroma of ripe tomatoes – an experience itself. I brought home a bunch of these juicy tomatoes and made a slightly different kind of salad. It works perfectly as a starter or as a side for grilled dishes. So simple but so tasty!

Ingredients
  

  • 3 tomatoes
  • 1 Red onion
  • Green olives
  • Spring onion
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tbsp balsamic vinegar
  • ½ tsp oregano
  • Salt & pepper

Method
 

  1. Slice the tomatoes and arrange them on a plate.
  2. Add thin slices of red onion and sliced green olives.
  3. Sprinkle chopped green onions on top.
  4. Mix all the dressing ingredients together and drizzle over the salad.
  5. Let the flavors combine for a few minutes, then enjoy this fresh and light salad.
