Delicious Vegetable and Lentil Soup

This soup is super easy to make and a great way to add more vegetables and legumes to your diet! It’s perfect for chilly spring evenings and tastes even better the next day. 
Servings: 6

Ingredients
  

  • 1 large onion
  • 2 carrots
  • 2 red bell peppers
  • 1 large or 2 small tomatoes
  • 250 g cauliflower
  • 1 small bunch fresh parsley
  • 2-3 garlic cloves
  • 2 liters vegetable stock or water
  • 150 g red lentils
  • 100 g basmati rice
  • Salt and black pepper, to taste

Method
 

  1. Chop the onion, carrots, tomatoes, cauliflower, parsley, and garlic into smaller pieces.
  2. Place everything in a large pot and add the vegetable stock.
  3. Simmer over medium heat until the vegetables are tender.
  4. Blend the soup until smooth, then add the lentils and rice.
  5. Continue cooking until both are soft and fully cooked.
  6. Season with salt and pepper to taste.
  7. Serve with your favorite cream or plant-based cream, chili flakes, and fresh parsley. Enjoy!
