Creamy Raspberry Oat Yogurt Bowl

Here’s a delicious dessert/snack recipe. This dessert isn’t overly sweet – it’s slightly tart and wonderfully refreshing! Of course, you can use any berries you like, or whatever berries you have available, to make the jam. If the dessert turns out a little too tart for your taste, simply drizzle some honey on top or even stir a little into the jam itself!
Servings: 2

Ingredients

Granola:
  • 70 grams oats
  • 20 grams coconut flakes
  • 15 grams almond flakes
  • 2 tsp maple syrup or honey
  • a pinch of cinnamon
Jam:
  • 100 grams frozen raspberries
  • 3 tbsp water
  • 1 tbsp chia seeds
For layers:
  • 150 grams Greek yogurt or any yogurt of your choice
For topping(optional):
  • fresh raspberries
  • mint

Method

  1. Mix all the granola ingredients together. Bake in the oven at 180°C for about 20 minutes, stirring occasionally.
  2. While the granola is baking, prepare the jam. Add the frozen berries and water to a pot. Heat over medium heat until the berries have softened, then mash them with a fork. Add the chia seeds and cook for a few more minutes. Let the jam sit for 20–30 minutes to thicken.
  3. To serve, layer the ingredients: start with granola, then yogurt, then jam, and finish with more granola on top. Garnish with fresh raspberries and mint.
