Creamy Pasta With a Surprise Ingredient

This pasta is a very simple and delicious way to add legumes to your menu. White beans give the sauce a lovely creaminess, add fiber, and make the dish more filling. I think even kids will enjoy this recipe!

Ingredients
  

  • 250 g of your favorite pasta
  • 1 tbsp olive oil
  • 1 onion
  • 1 garlic clove
  • 1 can white beans 400 g, drained and rinsed
  • 1 can crushed tomatoes 500 g
  • ½ tsp dried basil and thyme
  •  salt and pepper to taste

Method
 

  1. Cook the pasta according to the instructions on the package. I like to use chickpea or lentil pasta because they contain more protein and don’t affect blood sugar as much as regular pasta.
  2. Heat olive oil in a pan, add chopped onion and garlic, and sauté for a couple of minutes. Then add crushed tomatoes, white beans, basil, thyme, salt, and pepper. Mix well and simmer with a lid on over medium heat for about 10 minutes.
  3. Next, blend the mixture until creamy (add a little water if needed). Mix pasta into the sauce and serve with parsley or basil.
