Method
- Cook the pasta according to the instructions on the package. I like to use chickpea or lentil pasta because they contain more protein and don’t affect blood sugar as much as regular pasta.
- Heat olive oil in a pan, add chopped onion and garlic, and sauté for a couple of minutes. Then add crushed tomatoes, white beans, basil, thyme, salt, and pepper. Mix well and simmer with a lid on over medium heat for about 10 minutes.
- Next, blend the mixture until creamy (add a little water if needed). Mix pasta into the sauce and serve with parsley or basil.
