Asian-Style Salad With Peanut Dressing

My absolute favorite salad right now! I’ve been making it a lot lately and adjusting the recipe each time… now it’s finally just the way it should be. Makes about 3-4 servings.
Servings: 4

Ingredients
  

You will need:
  • 300 g iceberg lettuce
  • 300 g  red cabbage
  • 200 g carrot
  • 200 g red bell pepper
  • 40 g green onion
  • 360 g cooked tofu, edamame beans, chicken, shrimp, or salmon
  • 40 g peanuts
  • cilantro (optional)
Spicy Peanut Dressing:
  • 3 tbsp peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp maple syrup (or honey/agave syrup)
  • 1 tbsp sriracha
  • 2 tbsp lime juice
  • 1 grated garlic cloves
  • 1 tbsp grated ginger

Method
 

  1. Chop all the salad ingredients into pieces of your preferred size. The smaller the pieces or the thinner the strips, the better — at least in my opinion 🙂
  2. Mix together all the peanut sauce ingredients and pour the sauce over the salad.
  3. Garnish with coriander, chopped peanuts, and green onion.
  4. Enjoy!
