Overnight Oats with Banana and Peanut Butter

Here's a simple and delicious overnight oats recipe! It keeps you full and energized for a long time.

Ingredients
  

Overnight oats:
  • 450 g coconut milk (or regular milk)
  • 100 g rolled oats
  • 35 g chia seeds
  • 100 g unsweetened coconut or Greek yogurt
Date–peanut butter cream
  • 5 soaked medjool dates (soak for about 10 min in warm water, then drain and discard the water)
  • 85 g water
  • 30 g peanut butter
Toppings:
  • Banana, berries, cacao nibs

Method
 

  1. Mix all the overnight oat ingredients. Refrigerate for at least 2 hours or overnight. For the date-peanut cream blend the dates, water and peanut butter in a blender until smooth and creamy.
  2. Spread a layer of date–peanut butter cream on the bottom of a jar or bowl. Add the overnight oats on top. Cover with another layer of date–peanut butter cream. Garnish with banana, berries, cacao nibs or any toppings you like. This overnight oats is easy to prepare in larger batches, so your breakfast will be quick and effortless. Enjoy!
