The Easiest Ever Vegetable Lentil Soup!

Here’s one of my favorite soup recipes — it’s incredibly easy to make, very nourishing and sooo delicious! So if you’re wondering what to cook on a snowy, cold winter evening (or a rainy day like here), this recipe is just for you!

Ingredients
  

You will need:
  • 2 tbsp  olive oil
  • 1 large onion or a couple of smaller ones
  • 3 garlic cloves
  • 4 carrots
  • 3 celery stalks
  • 2 larger potatoes
  • 200 g rinsed red lentils
  • 2 tsp yellow curry powder
  • ½ L vegetable broth (I used homemade stock cubes with water) or simply water
  • Salt and pepper to taste

Method
 

  1. Peel and prepare all the vegetables.
  2. Heat the olive oil over medium heat and add the onion and garlic. Sauté for a few minutes, then add the curry powder along with a little salt and pepper. Cook for another minute, stirring constantly (so nothing burns).
  3. Add the carrots and celery. Cook for a couple more minutes, then add the potatoes, lentils, and broth. Simmer over medium heat with the lid on until everything is tender.
  4. Blend the soup slightly, but not completely smooth. Adjust seasoning with salt and pepper if needed. Serve with a squeeze of lemon juice, seeds, fresh parsley, and for example some focaccia!
