Simple Rice Dish with Beans and Vegetables

Here’s a very simple and quick rice dish packed with a variety of vegetables. This quantity serves several people (about 4–6 portions), and you can easily use whatever vegetables you have at home or prefer the most. Have fun experimenting!

Ingredients
  

  • 300 g basmati rice
  • 1 red onion
  • 1 large carrot
  • 1 red bell pepper
  • 1 tomato
  • 100 g frozen peas
  • 100 g frozen corn
  • 1 can black beans, rinsed and drained
  • 1 tsp paprika powder
  • 1.5 tsp ground cumin
  • 1 tsp garlic powder
  • 1.5 tsp salt(or to taste)
  • black pepper to taste
  • 2 tbsp chopped parsely
  • 600 ml water

Method
 

  1. Rinse the rice thoroughly.
  2. Chop all the vegetables into small pieces.
  3. Add rice to a pot, followed by the vegetables, spices, parsley, and water.
  4. Place pot on the stove and bring it to a boil. Then cover with a lid and cook over medium heat for about 30 minutes, until rice is soft and all the water has been absorbed.
  5. Serve with your preferred side, such as Greek yogurt, chicken, shrimp, or fish.
  6. Enjoy your meal!
