Nourishing Buckwheat Granola

This granola is perfectly crunchy and a great alternative to regular granola. It’s rich in fiber and protein, which help keep you full and support digestion. Definitely worth trying!

Ingredients
  

  • 300 g raw buckwheat groats
  • 50 g pumpkin seeds
  • 30 g sunflower seeds
  • 20 g ground flaxseeds
  • 30 g coconut flakes (or shredded coconut)
  • 25 g (about 2 tsp) melted coconut oil
  • 25 g (about 2 tsp) maple syrup or honey
  • Cinnamon to taste
Optional add-ins after baking:
  • Raisins
  • Dried and chopped figs
  • A few squares of chopped dark chocolate

Method
 

  1. Preheat the oven to 160 °C (320 °F). 
  2. Mix all the granola ingredients together.
  3. Spread the mixture onto a baking tray lined with parchment paper and bake in the middle of the oven for about 20–25 minutes, stirring occasionally.
  4. Let the granola cool completely, then add your preferred toppings and store in an airtight jar.
  5. Serve with Greek yogurt and berries 🥰
  6. You can replace the seeds used in this recipe with your favorite nuts or other seeds.
